DAY 8 -
Squash... Who doesn't love a good winter squash? I love Kabocha, butternut, acorn, speckled, delicata, pumpkin, spaghetti squash and so many more. This season, I've been placing whole squash in my instant pot on the steamer rack, with about an inch of water and cooking for about 15 minutes. The skin falls off, the seeds and membrane scoop out easily and the squash is perfect to eat as is or to use in soup or another squash dish. This afternoon, I made cheese sauce with butternut sauce and it was delightful. So much Yum!
